Homemade Cream Cheese

I make my own Cream cheese.

Those Philly blocks at INA & Gourmet stores in Delhi are very expensive. And considering the number of times a cheesecake is made in my house, I find home made cream cheese not just economical but also lot healthier.




Cream cheese is a fresh cheese and  has a very short shelf life. Mild flavored with slight tang, it is very smooth and creamy textured.

There are lots of ways to make it at home, but following is the recipe to make the easiest cream cheese in no extra time.




The recipe was Adapted from Rajul
Recipe follows:

100gms Cottage Cheese / Paneer
3 Tbsp Cream
2 Tbsp Thick Curd
Milk (Optional : to smooth the mixture)

Procedure:

Blend all the ingredients together in a blender until smooth.
Add milk to the mixture if it is grainy until it reaches the creamy texture.

And Voila! 

Yum

  1. Ooh and I thought its a very tough thing to make but looks super easy and takes hardly any time. only thing I need now is homemade cottage cheese since I usually use frozen store bought paneer. Will sure make this for Kapeesh and vl keep u posted :)

      Homemade cottage cheese would work like a charm. Just hang it for few hours till all the moisture is gone from the cheese and you are set to proceed.

    1. Hi. Not sure about the grams. But the quantity yielded with this recipe is around one cup. Totally depends on your cottage cheese and the milk used to smooth-en the texture.

      Unfortunately I have never used it for frosting so don't know how exactly it would taste like. I'm sure it wont be very different though...

    2. I tried it! Mixed it with icing sugar...it came out well...only issue I could still taste lemon which I used to make the paneer...maybe I didn't wash it properly :(

    I noticed that most of the recipes, on your blog, using this cream cheese recipe are for frozen cheesecakes. Was wondering if this recipe would work for baked cheesecakes as well?

      I use this recipe mainly for frozen cheesecakes and frosting, but it is often added to French Apple cake ~ no problem there!
      I haven't tried baked cheesecake yet but its about time I should.
